How we prepare it
We shave Parmigiano Reggiano from quality aged wheels to preserve its true texture: thin enough to soften gently on a hot base, thick enough to keep their natural crunch and nutty character. No blends, no imitations — just pure Parmigiano cut the way it’s meant to be used.
Why it matters
Shaved Parmigiano behaves completely differently from grated cheese. It delivers a sharper, cleaner flavour and a more refined finish. Added after baking, the scaglie soften, release aroma, and elevate tomato, mushrooms, grilled vegetables, or even a white base with a savoury kick that only real Parmigiano can give.
