How we prepare it
This is not cheddar, not grated “pizza cheese”, and not the watery supermarket balls. It’s real fior di latte, made for pizzerias and cut into thicker strips so it melts slowly and evenly. In a home oven, which never reaches pizzeria temperature, this cut prevents the cheese from boiling, leaking water or drying out.
