What it is
Aged Pecorino Romano with intense, salty depth and clean sharpness. Made from 100% sheep’s milk and grated fresh for maximum aroma, it’s one of the most powerful flavour enhancers you can add to a pizza.
How we prepare it
We grate it fresh from whole Pecorino Romano wheels to maintain its natural intensity and fine, dry texture. This ensures it melts lightly on contact with a hot pizza without becoming oily or clumping — the behaviour you want from a true finishing cheese.
Why it matters
Most pre-grated Pecorino is dull, harsh, or overly salty. Freshly grated Pecorino Romano is completely different: bright, complex, and packed with natural umami. A small amount is enough to lift tomato, anchovies, mushrooms, and any vegetable topping, adding depth that no other cheese can replicate.
