What they are
Anchovies from Cetara by Armatore, produced on the Amalfi Coast using the traditional Cetara method. Mature, compact fillets with a clean aroma and a deep, balanced savoury profile.
How they’re made
Fresh anchovies are selected and salted shortly after fishing, then matured slowly under salt for several months in wooden barrels. Once fully matured, they are hand-cleaned, filleted, gently desalted, and preserved in olive oil. This long curing process develops flavour naturally, without bitterness or excess salinity.
Why they matter
These anchovies are built for heat. On pizza, they keep their structure, soften evenly, and release flavour without overwhelming the base. The result is clarity, depth, and control—exactly what anchovies should bring to a proper pizza.
