How we prepare them for you

We use 100% porcini, never mixed with cheaper mushrooms. This gives a pure, concentrated flavour and a natural creaminess that varies with each batch — sometimes smoother, sometimes with larger pieces. It’s a sign of real porcini, not processed mushroom blends. Their depth and aroma come through immediately the moment they hit a warm base.

Why they matter

Porcini are in a league of their own: intense, fragrant, and capable of transforming an entire pizza with just a few spoonfuls. They add richness without heaviness and pair perfectly with mozzarella, burrata, Pecorino, or a simple white base. Their creamy texture makes them ideal even without tomato — but they work just as well over a thin layer of sauce if you prefer.
